| Spicy Italian sausage, grilled, cut into 1" chunks |

| Directions |
1. Cook rice according to package directions. Hold warm. 2. Heat oil in a sauté pan. Sauté onion and peppers until softened and beginning to brown. Add garlic; cook 30 seconds more. Add the sausage, chicken, shrimp and tomatoes. Cook to heat through and soften the tomatoes. Pour in the broth and simmer 2 minutes. Hold warm. 3. For each serving, place 1 cup of rice in a bowl. Top with 1 cup of mixture making sure to get a selection of sausage, shrimp and chicken. Garnish with 1 tsp. parsley. |
