Paella Bowl

Hint For a richer flavor, substitute half the chicken broth with white wine.

Ingredients Amount
UNCLE BEN'S CENTER PLATE RICE™ Paella Rice, cooked 18 cups
Vegetable oil 6 Tbsp.
Onion, sliced 3 cups
Red pepper strips 3 cups
Green pepper strips 3 cups
Garlic, chopped 2 Tbsp.
Spicy Italian sausage, grilled, cut into 1" chunks 1½ cups
Chicken, grilled, cut into 1" cubes 1½ cups
Shrimp, grilled 1½ cups
Tomato, cut into 1" chunks 6 cups
Chicken broth ¾ cups
Parsley, chopped 6 Tbsp.
Directions
1. Cook rice according to package directions. Hold warm.
2. Heat oil in a sauté pan. Sauté onion and peppers until softened and beginning to brown. Add garlic; cook 30 seconds more. Add the sausage, chicken, shrimp and tomatoes. Cook to heat through and soften the tomatoes. Pour in the broth and simmer 2 minutes. Hold warm.
3. For each serving, place 1 cup of rice in a bowl. Top with 1 cup of mixture making sure to get a selection of sausage, shrimp and chicken. Garnish with 1 tsp. parsley.
